Strawberry, Avocado, & Goat Cheese Salad


This colorful salad has already become one of my summer staples. It’s the perfect combination of sweet and tangy. It works great as a side dish, or you can add your favorite healthy protein on top and serve as a main ccourse.



Strawberries are an excellent source of fiber, Vitamin C, and manganese. They are also packed with powerful antioxidant and anti-inflammatory phytonutrients (like ellagic acid, anthocyanins, and flavonols). Best of all strawberries have one of the lowest sugar contents of all fruits.


Goat cheese is lower in lactose, and higher in calcium and healthy fats like MCT (medium chain triglycerides) compared to traditional cheese. Additionally, it doesn’t contain the inflammatory A1 protein found in cow’s milk. For these reasons, I opt for organic goat cheese instead of traditional cheese whenever possible.





Ingredients

  • 10oz bag of organic spinach*

  • 16oz carton of organic strawberries*, quartered

  • 1 avocado, cubed

  • ½ red onion sliced

  • 1/3 cup crumbled goat cheese

  • Olive oil

  • Balsamic Glaze


Directions

  • Toss all ingredients together in large bowl

  • Drizzle with olive oil and balsamic glaze

  • Enjoy!


*While it's a good idea to always buy organic, conventional spinach and strawberries are two of the most contaminated foods, so it is extra important to get these organic.*
