Pear and Arugula Salad

This hearty salad will quickly become one of your winter favorites. Focusing on whole foods is a great approach to getting back on track after an indulgent holiday season, and salads are an easy way to incorporate more fresh healthy foods into your routine.



Bartlett pears have a sweet and slightly tart flavor with a smooth buttery texture. They pair well with a sharp cheddar that’s tangy and complex.


Pears are high in fiber and low in sugar, making them a low-glycemic fruit. They are a good source of Vitamin C and the essential trace mineral, Copper, which both act as powerful antioxidants and also support proper collagen synthesis.



Ingredients

  • 5 cups arugula

  • 2 bartlett pears, sliced

  • 1/4 red onion onion, sliced

  • 4oz sharp cheddar cheese, cubed

  • 1 tablespoons capers

  • ½ cup dry roasted and salted cashews

  • Olive oil

  • Balsalmic glaze


Directions

  • Combine ingredients in large bowl and toss with olive oil

  • Drizzle with balsalmic glaze before serving

  • Enjoy!
