This pie takes just 10 minutes to prep, and has only 5 ingredients. It's gluten free, vegan, and refined sugar free. Oh, and it's delicious!
I'm lazy when it comes to baking pies, so I used a frozen store bought crust. If you're also using a premade frozen crust you'll need to let it thaw, then "pre-bake" or "blind-bake" it for 12-15 minutes at 375F before adding the filling.
Ingredients
1 premade gluten free, vegan pie crust
1 & 1/2 cups pecans
3/4 cup pitted dates
1/2 cup maple syrup
2 tablespoons ground flaxseed
1/2 teaspoon pumpkin pie spice
Directions
Preheat oven to 350F
In a food processor, combine 1/2 cup pecans, dates, maple syrup, flaxseed, and spice until you have a smooth batter
Poke holes in the pie crust with a fork to avoid bubbling
Add 1/2 cup pecans to bottom of pie crust and spread out evenly
Pour batter over pecans and spread out evenly
Use remaining pecans to top the filling
Bake for 40-45 minutes
Let cool at least 1 hour
